Apple crumble cheesecake has a shortbread crust, a layer of caramel apples, a creamy cheesecake filling, and an apple pecan crumble topping.

First you’ll want to make your shortbread crust by combining  flour, butter, sugar, salt and egg yolk until the mixture resembles coarse crumbs.

Press onto the bottom of a 9-inch springform pan and bake at 400F until a light golden brown.

Pour apples on your baked crust and drizzle with salted caramel sauce.

Next, work on your cream cheese mixture.

Pour on top of your apple layer and bake at 325F until set.

While that's in the oven, combine diced apples, brown sugar, chopped pecans, old fashioned oats and butter. Cook until apples are tender.

Place apple topping on top of baked cheesecake and chill overnight.
