Ube mochi is a tender, chewy and delicious way to enjoy ube. It’s easy to make too! 1 bowl, less than 10 ingredients, done in less than an hour, happiness in every bite.

Start by combining butter, sugar and  eggs.

Add ube extract.

Add Mochiko flour or glutinous rice flour.

Add evaporated milk and coconut milk.

Transfer ube mochi batter to pan and bake for 45 minutes at 350F.

Allow to cool completely before slicing into bars. That's it!
