Mascarpone cookies are soft, tender and so simple to make. They’re great on their own, dipped in chocolate or sprinkled with nuts.

Start by creaming butter and sugar. Then add an egg yolk and some vanilla extract.

Add mascarpone cheese and beat until combined.

Add all purpose flour in thirds, mixing well after each addition.

Roll the cookie dough into a log, freeze and when ready, slice into 1/4 inch thick pieces.

Bake at 350F for 10 minutes or until the bottom edges start to brown.
