Apple bars have melt-in-your mouth  shortbread crust, soft caramel apples, crispy crumble topping. They're delicious, easy to make and will make your home smell like fall.

To make the crust:  combine flour, butter, sugar, salt, an egg yolk and vanilla extract in a bowl until it resembles a course meal

Transfer to a 9×9 inch baking pan and press to the bottom with your hands. Bake at 400F until light golden brown.

To make the oat crisp: mix all crisp ingredients together in a medium bowl until combined and evenly moist.

Time to assemble! Put apples on top of your baked shortbread crust.

Drizzle with salted  caramel sauce.

Top with oat crumble.

Bake at 350F until the apple filling is tender and the crumble is crisp and golden brown.
