Stir yeast, milk mixture and all-purpose flour until the dough starts pulling and sticking together in a ball.

Transfer to a floured surface and knead until smooth and elastic. Allow to rise until double in size.

When ready, divide into 12 equal pieces.

Flatten then brush each piece with melted butter and sprinkle with cheddar cheese.

Roll each piece into a spiral, place on ensaymada moulds, brush with more butter, and allow to rise a second time.
