Matcha overnight oats — a delicious and healthy way to jumpstart your day. The unique taste of matcha is complemented perfectly by white chocolate chips for a breakfast treat that you can prep ahead and grab as you go.
In a medium bowl, sift matcha powder into the almond milk and whisk until the matcha is fully incorporated. Set aside.
1½ cup unsweetened almond milk, 1 tsp matcha powder
In a large bowl, stir rolled oats, chia seeds, white chocolate chips and a pinch of salt until combined.
2 cups rolled oats (or old-fashioned oats), 2 tbsp chia seeds, ½ cup white chocolate chips, pinch salt
Stir in matcha mixture, Greek yogurt, vanilla extract and honey until fully incorporated.
½ cup plain Greek yogurt, 1 tsp vanilla extract, honey or maple syrup
Transfer into individual containers and chill overnight. They will be ready to eat the next morning. Optional: top with dried fruit, nuts or more chocolate!

Notes
You can use dairy milk or any kind of unsweetened milk instead of almond milk. You can also use maple syrup or agave instead of honey.
The number of servings largely depends on the size of your individual containers. We use 250-ml/8-oz mason jars and get 5 jars that are about ¾ full out of this recipe.
Alternatively, you can opt to refrigerate the whole batch of oats and just scoop what you need into a bowl. Just make sure to store the oats in an airtight container and return to the fridge.
