Ube Revel Bars

Ube revel bars are the ube version of your favorite chocolate revel bars. Instead of fudge, we have creamy ube jam in between chewy oatmeal cookie layers and the combination is delicious! Easy to make, makes a big batch, your new favorite ube dessert.

Instructions

  • Preheat oven to 350F. Grease then line a 9x13 inch baking pan with parchment.
  • In a bowl, combine dry ingredients.
    2½ cups all purpose flour, 3 cups rolled oats, 1 tsp salt, 1 tsp baking soda

  • Using a stand mixer fitted with the paddle attachment or in a bowl using an electric hand mixer, beat butter and vanilla until incorporated.

  • Add brown sugar and continue to beat until light and fluffy. Scrape the bottom and sides of your bowl.

  • Add eggs one at a time, making sure each one is fully combined.

  • Add dry ingredients and stir on low, then work your way up to medium speed, until the batter is well blended. The batter will be thick and sticky.

  • Divide the batter and reserve about a third for the topping.
  • Transfer the rest to your prepared pan, spread evenly and pack tightly on the bottom.

  • Spread your ube jam on top. Make sure to spread evenly and cover the whole pan.

  • Take chunks of your reserved batter and place on top of the ube. Gently press the dough into the ube.

  • Bake for 30 minutes or until the crumble on top turns golden brown.

  • Take out of the oven and allow to cool completely before slicing into bars.

Notes

  1. Since the batter is very sticky, I find that using slightly oiled hands works best in spreading it on the pan.
  2. To make ube jam easier to spread, warm it in the microwave in 10-second increments until soft and more manageable.
