I’m a little surprised to discover that revel bars are not so popular here as it is in Manila.
In case you haven’t heard of them either, revel bars are oatmeal cookie bars with a layer of chocolate fudge in between. And they are dangerously tasty!
There are some variations, like dulce de leche, peanut butter and white chocolate.
Let’s add ube to that list, shall we?

Whether you love chocolate revel bars, or are new to the wonderful world of revel bars, you’ll enjoy making this recipe.
- Easy to make. The recipe is simple and straightforward, even beginners can make it perfectly.
- Feeds a crowd. It yields 24 bars, more if you cut it smaller. Perfect for company and there are enough for seconds!
- Big ube flavor. We use ube jam as the filling, that’s it. Enjoy the pure ube flavor.

How to make

Ube revel bars are so easy to make.
Ingredients
You’ll need pantry staples like all purpose flour, baking soda, eggs, brown sugar, and vanilla extract. You can find the full ingredient list with measurements in the recipe card at the bottom of this page.
A few things to note:
- Rolled oats — they’re great for baking. You can also use old-fashioned oats. I don’t recommend quick cooking or instant oats.
- Butter — I usually default to unsalted butter when baking but in this case, just use whatever you have on hand.
- Ube jam — I make my own ube jam or ube halaya. However, you can use store-bought jam just as long as it’s jam that you enjoy eating on its own.
Baking tools
I like using my stand mixer or my electric hand mixer because the dough is sticky and challenging to incorporate.
They’re not necessary though. You’ll just need a little elbow grease using a whisk to make sure your batter is well blended.
You also need a 9×13 inch baking pan.
Step-by-step photos
Preheat oven to 350F. Grease then line a 9×13 inch baking pan with parchment.

In a bowl, combine dry ingredients.

In another bowl, beat butter and vanilla until incorporated.

Add sugar and continue to beat until light and fluffy. Add eggs one at a time, making sure each one is fully combined.

Add dry ingredients and stir on low, then work your way up to medium speed, until the batter is well blended. The batter will be thick and sticky.

Divide the batter and reserve about a third for the topping. Transfer the rest to your prepared pan and spread evenly and pack tightly on the bottom.

Spread your ube jam on top. Make sure to spread evenly and cover the whole pan.

Take big chunks of your reserved batter and place on top of the ube. Gently press the dough into the ube.

Bake for 30 minutes or until the top turns golden brown.
Take out of the oven and allow to cool completely.
For cleans slices, chill for a few hours. Enjoy!
Expert baking tips

Easy, right? Here are tips for the best ube revel bars every time.
- Start with room temperature ingredients. They are easier to incorporate and helps prevent over-mixing.
- Grease pan before putting parchment paper. This helps the parchment paper stay in place as you’re spreading the batter.
- Use slightly oiled hands to spread and press the batter onto the pan. It’s easier than using a spatula and gives you more control.
- Warm ube jam is easier to spread. Microwave it in 10-15 second increments until it’s softer and more spreadable.
- Chill before slicing. This gives you the cleanest slices.
