    Mango Chia Pudding – Just 4 Ingredients!

    This mango chia pudding is light, refreshing and a breeze to make. It’s the perfect breakfast, snack or dessert for those hot summer days when lazy is the only way to be.

    When it’s summer and the weather is nice, we try (very hard) to get up and go out and do activities to make up for all the couch potato-ing we do in the winter.

    Let’s face it though; there are days when it’s just too dang hot to be outside doing something that requires movement.

    There are days when it’s perfectly acceptable to just lie down in the shade and sleep or read a book or sit in your balcony or patio and do nothing.

    This mango chia pudding is just the thing for those days. With only 4 ingredients, nothing can be easier to make! Just stir, let sit, layer and enjoy. So delicious! It’s good for you too.

    How to make mango chia pudding

    Mango Chia Pudding

    Nothing can be easier to make than this mango pudding recipe.

    1. COMBINE CHIA AND MILK. In a medium bowl, stir chia seeds, almond milk (or your choice of milk) and sweetener. We like honey or maple syrup. Let that sit for 10 minutes.

    2. BREAK IT APART. Go back to your mixture and break apart any chia clumps that may have formed with a fork. Stir again.

    4. CHILL. Transfer to an airtight container and chill overnight. You’ll notice the chia seeds getting considerably larger as they absorb the milk.

    3. SERVE. When you’re ready to serve, layer with mango puree in a serving glass. Garnish with your favourite toppings like coconut and nuts. We like to top it off with mango chunks too.

    Mango Chia Pudding

    Not only is this chia mango so easy to make, you also only need 4 ingredients:

    • Chia seeds
    • Unsweetened almond milk (but like I mentioned, you can substitute with any milk of your choice)
    • Your choice of sweetener (we like using honey and maple syrup)
    • Mango puree

    I love to use this all-fruit mango puree that we can find locally made from Philippine carabao mangoes.

    If you can’t find it where you are, you can use any brand or even make your own — just take your fresh mangoes to the blender or food processor, strain and sweeten, if needed, to your liking.

    What are chia seeds?

    Mango Chia Pudding

    If you’re not familiar with chia seeds, they are black seeds from the plant Salvia Hispanica, which is related to mint. They were high up on the Aztec and Mayan diet; in fact “chia” is the ancient Mayan word for “strength.”

    Chia is one of the most popular superfood, or food that have exceptional nutrient density, like green tea, blueberries, quinoa and turmeric. You can read all about their health benefits here.

    In addition to mango pudding, chia seeds are often added to cereals, granola and even baked goods. A quick, easy and delicious way to add nutrients to your meal.

    Making this overnight mango chia pudding is really as simple as stir, wait, combine and enjoy. Now what can be easier? 

    Then you can spend the rest of your time chilling and doing nothing. It is summer after all.

    Ingredients
     
     

    • ½ cup chia seeds
    • 2 cups unsweetened almond milk or your choice of milk
    • honey or maple syrup to taste
    • 2 cups mango puree about 4-6 ripe mangoes

    Instructions
     

    • In a medium bowl, stir ½ cup chia seeds, 2 cups almond milk and honey. Let it sit for 10 minutes.
    • Go back to your mixture and break apart any clumps that may have formed with a fork. Stir again. Transfer to an airtight container and chill overnight.

      This has got to be the prettiest pudding I ever did see, Jolina! And only 4 ingredients?! What’s not to love! I could eat all three of those in that photo, lol.
      I can’t believe we are in mid July either! P.S are you watching Fear, the Walking Dead? Thoughts? I’m kinda liking this season 🙂

        Aw thanks Dawn! And even if we did have three each of those glasses it’s OK because this is healthy (for once haha!). I actually gave up on that show season 1. I’m like, don’t do that don’t you know what to do??? HAHAHA like I’m a veteran zombie apocalypse survivor. I’m guessing it got better?? Maybe I should give it another shot!!
