    Grilled chili corn on the cob is sweet and salty with a delightful kick at the end. Squeeze some lime, sprinkle some parmesan cheese and elevate summer’s favorite vegetable and barbecue staple! You won’t have grilled corn any other way again.

    Summer is well underway and we are absolutely loving it. 

    We’ve been drinking our fair share of cherry milkshakes, tropical mocktail punch and this fabulous Hawaiian mai tai recipe.

    We’ve been barbecuing like crazy with our new grill too (we decided to finally say goodbye to our trusty electric grill) and loving every minute of it.

    Lots of aloha burgers, Filipino pork barbecue, grilled shishito peppers and other grilled vegetables.

    Chili corn on the cob is on our regular rotation too. Sweet and tangy, salty and spicy, it’s definitely another summer favorite.

    Let’s grill.

    Why you’ll love corn with chili butter

    Corn with chili lime butter.
    • Simple to make. All you really need to do is mix chili flakes with melted butter, slice some limes and sprinkle some parmesan cheese. Grill the fresh corn however you like.
    • Easy to customize. Replace the chili flakes with cayenne pepper or chili powder if you want more zing. And sprinkle as little or as much parmesan cheese as you like! It’s entirely up to you.  
    • Grilled corn, but better. This is the only way we eat grilled corn now. If you think grilled corn with butter is pretty awesome, chili lime corn on the cob is even better.

    How to make

    You’ll only need 5 ingredients and less than 30 minutes to make this recipe.

    First you want to place your corn on the grill.

    While that’s cooking, mix your chili flakes into your melted butter.

    When the corn is done cooking, brush your chili butter on your corn. 

    Finish it off with some fresh lime juice, grated parmesan cheese and more crushed red chili peppers.

    It’s that easy!

    What’s the best way to grill corn?


    Different people grill corn differently.

    We used to grill corn in the husk until it’s cooked, remove the husk, then put it back on the grill for a few minutes for those rustic grill marks. We get juicy, lovely grilled corn every time.

    But it became tedious so we just went straight to removing the husk and putting the corn straight on the grill. That worked great too.

    Some people like to boil the corn first, then grill. 

    Bottomline, do whatever works for you.

    Why did my butter solidify?


    This is perfectly normal. 

    Simply microwave the mixture about 15 seconds, give it a quick stir until the butter is melted again, and it’s good as new.

    Can I make corn salad?


    You absolutely can.

    What we do is after they’re cooked, we remove the kernels off the cobs using a sharp knife, drizzle it with chili butter, squeeze some lime juice and sprinkle some parmesan cheese.

    To add some Mexican-style street corn flavor to it, we sometimes add cilantro as well. 

    Works so well as a summer salad!

    You can also serve this with chicken bacon ranch sliders for an awesome meal.

    • Electric Grill

    Ingredients
     
     

    • ½ cup butter melted
    • 1 tbsp chili flakes plus more for sprinkling
    • 6 ears fresh sweet corn
    • 1 pc lime
    • grated parmesan cheese for sprinkling

    Instructions
     

    • Stir melted butter and chili pepper flakes until combined. Set aside.
      ½ cup butter, 1 tbsp chili flakes
    • Preheat your grill and grill corn until cooked.
      6 ears fresh sweet corn
    • Brush a generous amount of chili butter on each cooked corn.
    • Squeeze fresh lime juice, sprinkle with parmesan cheese and more crushed chili peppers. Enjoy!
      1 pc lime, grated parmesan cheese
